1-2 L77 New York strip steak, seasoned with salt, pepper, & garlic powder
4 strips of bacon, diced
*1 small onion, thinly sliced
*1 clove garlic, minced
5 cups Oak Rose Asian greens, torn
*2 TBSP red wine vinegar
*1 TBSP maple syrup
*2 TBSP toasted pine nuts Salt & pepper to taste
Preheat grill or a heavy pan to medium heat. Once hot, place steaks on the grill and cook for 7 minutes, turn and cover for another 6 minutes for medium rare. Remove and cover to rest for another 5-8 minutes. While the meat is cooking, heat a large skillet and add the bacon. Once it is crispy and all the fat has melted, add the onion and caramelize until bacon is crisp & onions are soft and just lightly browned around the edges. Add garlic, and then the greens. When the greens begin to wilt, add the vinegar, sugar, salt & pepper and toss to coat. Braise for 5 minutes and then toss in the pine nuts.
Slice steak thinly across the grain. Serve on top of the warm greens.
