Breakfast in no time
Weekday breakfast is one of those meals that I want fast and filling. Back when I was deep into my Crossfit days, I started making quiche or frittata in large trays that would last my husband and I the week. Slice off a piece, reheat and BOOM, easy peasy breakfast. These days, two kids, minimal sleep and a pandemic have replaced Crossfit, but the weekly quiche trays keep on making life just a little bit easier.
This week’s artichoke salami frittata is one of the first breakfast recipes I created and it is still a favorite. I hope it simplifies your weekday breakfasts.
